Apple and Cinnamon Oaty Pancakes

This is my usual breakfast on a Sunday morning…or any morning really!  They’re healthy enough to enjoy whenever you want.  Full of oaty, appley, cinnamony goodness.  Served warm with a drizzle of maple syrup, they make a delicious breakfast treat.

The oats make them more filling than your average pancake, and they release their energy slowly.  The apple adds extra fibre and vitamins.  And they’re made without refined sugar.  Use coconut oil to fry them (or no oil in a non-stick pan) to make them even healthier.


1.5 cups self-raising flour (or gluten-free flour mix if required)

1 cup oats (gluten free if required)

1 apple, grated

1 tbsp maple syrup

2.5 cups of water

1 tsp cinnamon

How it’s made:

Mix the flour, oats, cinnamon, apple and maple syrup together in a large bowl.

Add the water while mixing until it becomes a batter.

Heat a non-stick frying pan over a medium-high.  Add coconut oil or sunflower oil so that it thinly covers the base.

Drop 1/4 cupfuls of batter into the frying pan to form American-style pancakes.

Fry for a few minutes either side until golden brown. 

Serve with maple syrup.
