These pancakes taste like a smoothie and are an easy way of getting more fruit into your kids (or grown-ups!) with oats to keep you full for hours.
- 2.5 cups of unsweetened soya milk or other plant milk
- 1.5 cups self-raising flour (gluten-free if required)
- 1 cup of oats (gluten-free if required)
- 1 tsp vanilla essence
- Pinch of salt
- 1 tbsp maple syrup
- Coconut oil or sunflower oil for frying
Put the milk, flour, oats, maple syrup, salt, vanilla essence and three large strawberries in a blender and blend until smooth.
Chop a few more strawberries up and mix into the batter.
Heat a frying pan over a medium heat with the oil. Pour 1\4 cup of the batter into the pan at a time for each small pancake. Fry until golden on each side.
Serve with extra strawberries and maple syrup.
