Fried Garlicky Herby Mushrooms on Toast

This is one of my favourite breakfasts ever.  I pretty much always eat this when my partner isn’t home because he doesn’t like mushrooms, so I get to enjoy them all to myself!  It’s really simple to make and fast and mushrooms are very healthy.  It’s nice with really small button mushrooms whole or sliced chestnut mushrooms, which have a lovely flavour too.  I like it with lots of garlic and some thyme.

Ingredients:

Serves 1

Extra virgin olive oil

200g  button mushrooms

2 cloves of garlic

1/2 teaspoon dried thyme

Sea salt and black pepper

Toast to serve

How it’s made:

Heat 2 tablespoons of olive oil in a frying pan over a medium heat.

Peel and finely chop or crush the garlic.  Add to the frying pan and fry gently for a few minutes, stirring occasionally.

Add the mushrooms whole (or sliced if using larger ones).

Add the thyme, and salt and pepper.

Fry for about 10 minutes or so, stirring occasionally.

Serve on toast.  I like to drizzle a little extra olive oil on the toast before putting the mushrooms on too, for extra deliciousness.
