I’m always really hungry in the mornings and want a quick breakfast, and also something that is healthy and will keep me full for a while, so granola is perfect. Many store-bought granolas have lots of sugar or have honey so aren’t vegan, so I started making my own. It’s delicious, cheaper, I can add whatever I want, and make it suitable for kids too!
This granola has a yummy combination of coconut, almond and berries, and is really nice, quick and simple to make.
300g oats (gluten free if required)
4 tablespoons of melted coconut oil
2 tablespoons coconut sugar (or if you can’t get this, add extra agave syrup)
2 tablespoons agave syrup
Handful of sunflower seeds or other seeds
Handful of desiccated coconut (small coconut flakes)
Handful of flaked almonds
Dried berries (I used a mix of dried blueberries, cranberries, cherries and raisins)
How it’s made:
Preheat the oven to 160 degrees Celsius.
Line 2 baking trays with non-stick greaseproof paper.
Mix all the ingredients except the dried fruit in a large bowl.
Spread them over the two baking trays and cook in the oven for about 20-25 minutes, stirring once or twice. Keep an eye on it so it doesn’t burn towards the end of the cooking time.
When cooked, mix in the dried fruit. Leave to cool and then store in glass jars or lunch boxes.
