This homemade granola is really yummy, with apple, cinnamon, pecans and raisins. It has all the flavours of apple pie but is healthier. This makes a big batch of it so it’ll make quick and easy breakfasts for several days.
If you chop the nuts quite small then this is suitable for young kids, and because it has no honey, like many store-bought granolas, it’s safe for babies and suitable for vegans.
2 tablespoons coconut sugar (or regular sugar if you want)
2 tablespoons date syrup (or agave syrup or maple syrup)
4 tablespoons melted coconut oil
1 tablespoon ground cinnamon
100g chopped pecans
100g dried apple, chopped
How it’s made:
Preheat the oven 160 degrees Celsius. Line 2 baking trays with greaseproof paper or other non-stick paper.
Mix the oats, coconut sugar, cinnamon, date syrup, coconut oil, and pecans together in a large bowl.
Divide the mixture between two trays and spread out in a thin layer.
Bake in the oven for about 20-25 minutes, checking every 5 minutes and stirring to avoid burning. Alternate which baking tray is on the top shelf every 5 minutes also.
When it’s cooked, take it out of the oven and mix in the dried apple and raisins. Leave to cool and store in an air tight container.
