Noodles with Stir-Fried Veg and Easy Satay Sauce
This is the first in a series of recipes I came up with to feed four people for under four euro. I was originally going to do it for five euro but figured out I could easily come up with meals that cost even less. I want to show that being vegan doesn’t need to be expensive and is affordable and accessible for many people. In fact, being vegan can be a lot cheaper than eating animal products, just compare the price of meat to a tin of beans.
This recipe uses Blue Dragon whole wheat noodles, a Tesco packet of ready prepared stir-fry veg, Oriental Pacific sweet chilli sauce, and Tesco crunchy peanut butter, all purchased in Tesco. I used half of the sweet chilli sauce and peanut butter, so I only counted half the prices and there is some leftover, but they should last for a while in the fridge so can be used again for another meal.
This meal was really delicious and so quick to make. It literally took five minutes to make. I usually don’t use ready prepared veg but they were really nice. I rarely add cabbage to stir fries, and this pack of veg had three different types of cabbage, I guess because it’s cheap, but they were really nice and made it colourful. The sauce is really simple, made of sweet chilli and peanut butter. There is quite a bit of sugar in it, but I don’t mind that for an occasional meal and it was so easy to make that it was worth it. The meal is still overall healthy and contains fresh veg and protein in the peanut butter.
(Note: I used more expensive gluten-free noodles when I made it as I can’t have gluten, but for the purpose of this recipe, I checked the price of Blue Dragon whole wheat noodles. You can use any kind of noodles you want but check the ingredients since many noodles contain egg so aren’t suitable for vegans.)
Pack of stir-fry vegetables (€1.49)
100ml sweet chilli sauce (37c)
3 heaped tablespoons peanut butter (60c)
(Total price – €3.96)
How it’s made:
Cook the noodles according to packet instructions.
Heat 2 tablespoons of oil in a wok or large frying pan over a medium-high heat.
Stir-fry the vegetables for about three minutes.
Meanwhile, whisk together the sweet chilli sauce, peanut butter and about 100ml of water until smooth.
When the vegetables are cooked, stir in the sauce and cooked noodles and heat through.
