Cashew Butter Overnight Oats

Recently Rian keeps asking for “porridge cereal”, by which he means just porridge oats and soy milk.  Great that he’s asking for something healthy!  But I thought it would be better if soaked overnight, and if I added some extra healthy stuff, so I came up with this really simple but yummy cashew butter overnight oats.



Serves 3-4

2 cups of porridge oats

3 tbsp chia seeds

4 cups of unsweetened soy milk (or other plant milk)

2 tbsp cashew butter (or other nut butter)

Extra cashew butter to go on top




How it’s made:

Put the oats, chia seeds and plant milk in a large bowl and stir, cover and leave in the fridge overnight.

In the morning, stir the 2 tbsp of cashew butter into the oats, you can mix it in completely or leave littles bits of cashew butter throughout it, which I think is nice.

Top it with a tbsp of cashew butter, some sliced banana and cinnamon.  You can add some kind of sweetener like maple syrup or agave syrup if you like but we didn’t need any.
