After making my Carrot Hot Dogs I had the idea to use roasted carrot in these wrap roll-ups things. My kids love wraps, but I find they’re much easier for them to eat if they’re rolled up and sliced into little bite-size pieces like this. They love it! I thought the carrots would go really well with houmous, and make these a very nutritious snack. They also would work well for lunch boxes or kids’ party food!
I used the Lemon and Coriander Houmous that I made the other day, because it goes really well with carrots. You can often find lemon and coriander houmous in shops too, or can use any kind of houmous at all, or even mashed avocado, mmm.
4 medium-large carrots
A little olive oil
4 wraps (preferably wholegrain)
About 4-6 tablespoons of lemon and coriander houmous (recipe here)
Preheat the oven to 180 degrees Celsius.
Peel and top and tail the carrots. Drizzle with a little olive oil and roast in the oven for about 40 minutes, turning occasionally, until fairly soft. Leave to cool a little.
Spread about 1-1.5 tbsp of houmous over each wrap (more for bigger wraps) and spread it out evenly to the edges.
Place a roasted carrot at one end of the wrap and wrap the wrap around the carrot pretty tightly.
Slice the wrap into roughly 1 inch pieces and serve. If they are inclined to unravel then you can arrange them on a plate close to each other so they don’t unravel. You can serve these warm, room temperature or chilled. I liked them after chilling in the fridge for a while.
