Spiced Roasted Roots Soup with Chickpea Croutons

I just made this soup today, and it was so nice that we ate it all straight away!  So I thought I’d share the recipe.  I hadn’t made soup in a while, but it’s getting colder here now, so felt like a good day for it.  The spices and coconut milk make it really nice and comforting and warming for autumn time, and the chickpea croutons make it more filling and nourishing.

Sun-Dried Tomato and Kale Pesto Pasta

I felt like sun-dried tomato pesto pasta today and I want the kids to eat more greens, so I made this sun-dried tomato and kale pesto.  I added some chickpeas to make it even more nutritious and filling and because chickpeas go great with so many things.  I don’t know about other kids, but my kids will eat anything if it’s on pasta!  But you could also serve this pesto mixed with grains, baby potatoes, beans or lentils.

Carrot Hot Dog with Avocado

Hot dogs are something that my son has asked for because he sees them on TV (and he didn’t know what they were made of).  Of course we have to make them vegan, and we don’t eat a lot of faux meats, so carrot hot dogs are perfect!  They taste really nice, they’re healthy, they’re really simple to make, and they get the kids to eat vegetables!  I added mashed avocado to make it even more nutritious and because it’s yummy, but you can add more traditional toppings or whatever you like.  It is actually surprisingly like eating a hot dog!

Summery Chickpea Salad

This is the kind of salad that I make when I have lots of odds and ends left in the fridge at the end of the week, and need to make a meal quick!  When I made this I was really rushing to get the kids to eat something before going out, as you can see I didn’t even chop up the veg very neatly, but it tasted good and was healthy and filling.  My kids have always liked eating sweet crunchy raw veg and love eating plain chickpeas as a finger food, so this combines both of them.  It went really well with some homemade brown bread and baby salad leaves.Read More »
