My littlest vegan baby turned one a few days ago! It seems like only yesterday that she was born, and yet I can’t imagine life without her. I feel like she was meant to be in our lives, and her big brothers love having a sister more than anything. Recently Rian said, “we are so lucky to have her”, and I couldn’t agree more. It has been the best year ever.
Rian turned 5 a few days ago and we had a little celebration. These 5 years have been the best. It’s lovely to see how he has grown into such a kind and funny person. He keeps me entertained all the time, imagining stories, chatting about things he has learned, asking a million questions. He is so caring, always saying how he loves me and his brother and sister, how he loves animals and wants to help them. I’m so proud of him. Raising him has been the greatest things I’ve done so far, but no matter how grown up he gets, he will always be my baby.
What do vegan kids do for Halloween? That’s something that a few people have asked me. People have this idea that vegan kids will “miss out” on so many things, but I’ve found that they can have just as much fun as other kids do! This is what we did for Halloween this year, and some ideas for the future. (And some cute photos of Síofra!)
I haven’t been blogging much lately. I’ve just been really, really busy looking after the kids and not made time for it. But I made this curry today and it was so nice that I have to write down the recipe before I forget! I mostly just made it up as I went along, but I will definitely be making it again. And hopefully will be blogging again more regularly soon!
I just made this soup today, and it was so nice that we ate it all straight away! So I thought I’d share the recipe. I hadn’t made soup in a while, but it’s getting colder here now, so felt like a good day for it. The spices and coconut milk make it really nice and comforting and warming for autumn time, and the chickpea croutons make it more filling and nourishing.
After making my Carrot Hot Dogs I had the idea to use roasted carrot in these wrap roll-ups things. My kids love wraps, but I find they’re much easier for them to eat if they’re rolled up and sliced into little bite-size pieces like this. They love it! I thought the carrots would go really well with houmous, and make these a very nutritious snack. They also would work well for lunch boxes or kids’ party food!
